Pineapple Sensation Tofu Scramble

1 block firm tofu, pressed and crumbled
2 tablespoons olive oil
1/2 onion, diced
1 bell pepper, diced
1/2 teaspoon turmeric
1/2 cup Pineapple Sensation All Purpose Sauce
Salt and black pepper, to taste
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the onion and bell pepper. Sauté for 3 to 4 minutes, or until softened.
Add the crumbled tofu and turmeric. Cook for 5 minutes, stirring occasionally.
Stir in Pineapple Sensation All Purpose Sauce and cook for 2 more minutes.
Season with salt and black pepper, then serve warm.

Grilled Halloumi and Pineapple Skewers

1 pound halloumi cheese, cut into cubes
2 bell peppers, cut into chunks
1 red onion, cut into chunks
1 cup pineapple chunks
1/2 cup Pineapple Sensation All Purpose Sauce, divided
Metal skewers or wooden skewers soaked in water for at least 30 minutes
Instructions
Preheat the grill to medium-high heat.
Thread the halloumi, bell peppers, red onion, and pineapple onto the skewers.
Brush the skewers generously with Pineapple Sensation All Purpose Sauce.
Grill for 3 to 4 minutes per side, brushing with additional sauce as they cook.
Serve hot with any remaining unused sauce for dipping.

Pineapple Sensation Stuffed Bell Peppers

4 large bell peppers, tops removed and seeds discarded
1 cup cooked quinoa
1 can black beans, drained and rinsed
1 cup corn kernels
1/2 cup Pineapple Sensation All Purpose Sauce, divided
1 cup shredded cheese
Fresh cilantro, for garnish
Instructions
Preheat the oven to 375°F. Place the bell peppers upright in a baking dish.
In a large bowl, combine the cooked quinoa, black beans, corn, and 1/4 cup of Pineapple Sensation All Purpose Sauce.
Divide the filling evenly among the peppers.
Top each pepper with shredded cheese and drizzle with the remaining sauce.
Bake for 30 to 35 minutes, or until the peppers are tender and the cheese is melted. Garnish with fresh cilantro.

Pineapple Sensation Veggie Stir-Fry Bowl

2 tablespoons vegetable oil
3 garlic cloves, minced
1/2 cup Pineapple Sensation All Purpose Sauce
2 cups cooked rice or noodles
Sesame seeds, for garnish
Instructions
Heat the vegetable oil in a wok or large skillet over high heat.
Add the garlic and mixed vegetables. Stir-fry for 5 to 6 minutes.
Pour in Pineapple Sensation All Purpose Sauce and toss until the vegetables are evenly coated.
Cook for 2 more minutes, or until the vegetables are tender-crisp.
Serve over warm rice or noodles and garnish with sesame seeds.

Pineapple Sensation Roasted Cauliflower

1 large head cauliflower, cut into evenly sized florets
3 tablespoons olive oil
Salt and black pepper, to taste
1/2 cup Pineapple Sensation All Purpose Sauce
Chopped fresh parsley, for garnish
Sesame seeds, optional
Instructions
Preheat the oven to 425°F. Line a large baking sheet with parchment paper or lightly coat it with cooking spray.
Toss the cauliflower with olive oil, salt, and black pepper. Spread the florets in a single layer on the baking sheet.
Roast for 20 minutes, turning once, until the cauliflower begins to brown.
Toss the roasted cauliflower with Pineapple Sensation All Purpose Sauce, then return it to the baking sheet.
Roast for 5 more minutes. Garnish with parsley and sesame seeds before serving.

4 large portobello mushroom caps
1/2 cup Pineapple Sensation All Purpose Sauce, divided
2 tablespoons olive oil
4 burger buns
Lettuce, for serving
Sliced tomato, for serving
Sliced red onion, for serving
4 slices cheese, optional
Instructions
Remove the mushroom stems and gently clean the caps. Brush both sides with olive oil.
Coat the mushrooms with 1/4 cup of Pineapple Sensation All Purpose Sauce and marinate for 10 minutes.
Preheat the grill to medium-high heat. Grill the mushrooms for 4 to 5 minutes per side, or until tender.
If using cheese, place one slice on each mushroom during the final minute of cooking. Toast the buns lightly on the grill.
Assemble the burgers with lettuce, tomato, red onion, and the remaining sauce.

8 corn tortillas
1 cup shredded cabbage
1/2 red onion, diced
Fresh cilantro, for serving
Lime wedges, for serving
Instructions
Add the black beans to a skillet and warm them over medium heat.
Stir in 1/4 cup of Pineapple Sensation All Purpose Sauce. Reduce the heat and simmer for 5 minutes, stirring occasionally.
Warm the tortillas according to the package directions.
Divide the seasoned beans among the tortillas. Top with shredded cabbage, diced red onion, and fresh cilantro.
Drizzle with the remaining sauce and serve with lime wedges.
